Tomato Salad with Chimichurri

Tomato Salad with Chimichurri

1/2 cup olive oil
4 cloves garlic, chopped, or more to taste
1/2 cup fresh cilantro leaves
1/4 cup fresh oregano leaves
1 bunch flat-leaf Italian parsley, stems removed
3 tablespoons white wine vinegar, or more to taste
1/4 teaspoon cumin
1/4 teaspoon freshly ground black pepper
1/4 teaspoon red pepper flakes

Combine all the ingredients for the chimichurri in a food processor and pulse until you have a consistency similar to pesto. Slice your cherry tomatoes in half, toss with the chimichurri, and serve! We love our alongside some chilled pork loin and a side of grilled corn...
